Harvest Turkey and Roasted Zucchini

I don’t even know what to call this.  If I’m being honest, I got the idea from an old Rachel Ray 30-minute meals cook book.  Anyone else have those?  I have three…

Anyway – there’s a recipe for Turkey burgers that has been a long time favorite of Mike’s.  In fact, in my earlier cooking days, I used to make notes on recipes.  This one says “Mike loves these.”  This was back in first 3 years of marriage when I was still trying to impress him, AND he said he liked everything I cooked ;)!!  Now, 13 years later…I still can’t tell if when he adds hot sauce to my dinners it means he likes it or not?  He added hot sauce to this one…I’ll let you be the judge.  He just likes hot things….

1 lb ground turkey breast (I used the packages from Costco that have more than a pound in the package…more is BETTER = leftovers!)

2 Tbsp thyme

Salt and Pepper – to taste

1/2 cup yellow onion, chopped

1/3 cup red bell pepper

4 zucchini – sliced in half lengthwise

2 tbsp butter

fresh garlic

Optional toppings (I didn’t use any…but the kids and Mike did):

parmesan cheese

pizza or marinara sauce

ranch dressing

hot sauce

Pre-heat oven to 400 degrees.  Cut each zucchini into halves through the length.  Pat insides dry with paper towels (cut portion). Line a baking sheet with parchment paper and align on cut zucchini on baking sheet. In a bowl/cup, melt butter and then stir in fresh garlic.  Brush lightly over tops of zucchini. Sprinkle with salt and pepper to taste.  Cook in oven for 15-18 min. 

Sauté onions and red bell peppers over medium heat until onions are transparent.  Add ground turkey, thyme, S/P (and any other personal seasoning favs) and cook. 

Serve ground turkey mixture on tip of roasted zucchini halves.  Add toppings as desired.
